I made these protein pancakes on Friday and since making and posting them on Instagram I have had quite a few people ask for the recipe. (They were delicious and surprising low in calories and high in protein, fitting nicely in my current diet plan!) So I thought I would share the recipe with you guys.
Ingredients
(Serves 1-2)
Batter
175g Sweet potato
100g Egg whites
30g Whey Protein (or a plant based protein)
½ tsp baking powder
Toppings
100g Mixed berries
½ Lime
Optional: (Caramel Sauce, I used Walburn Farms, very low in calories)
Bake the sweet potato in the oven 180c for about an hour or until cooked inside and allow to cool( if you don’t want to wait an hr, cook in the microwave for roughly 6mins). When the potato is completely cool, peel the potato and mash. Then add the rest of the batter ingredients and whisk together until the batter is smooth.
Heat a non stick pan and add 1/3 of the batter to the pan. When bubbles start to form on the batter, flip the and cook for a further 1-2mins (until cooked inside). Then do the same with the rest of the batter. (should make 3-4 scotch sized pancakes.
Next the fun part! stack the pancakes – one pancake, followed by 1/3 mixed berries, followed by a squeeze of lime and repeat for the other pancakes. On the last pancake drizzle your caramel sauce. Then indulge 😀
